To go back to the old Photos app you'd need to either roll back Feature Update 22H2 within 10 days, or reinstall the older version. System Restore points are removed with a Version Update so that will not work as it does for regular Windows Updates. If you see the Pioneer Program randomly show up there one day, it means you were selected. As far as I know, it is not a request to join thing.
